Once upon a time, children in Japan marveled at the deftly crafted stories and illustrations that picture-storytellers had to offer. The storyteller would ride his bicycle to a vacant lot to tell tales, and the kids couldn't wait to hear them. Today's kids, however, are far more likely to be spending their time with video games. Nevertheless, storyteller Tameharu Nagata continues to ride, searching for audiences that are willing to listen.

Japan gets a lot of rain, which can be both a blessing and a curse.

Rain falls year-round in Japan, but differs from season to season. Tokyo gets its fair share of rain, but some areas of Japan receive more than three times as much.

Traditionally, the Japanese prayed for rain during times of drought, and found ways to put up with violent downpours. But they also built large reservoirs of water, some of which are over 1,000 years old.

Today, Japan's methods of putting up with rain are more sophisticated than ever. In urban areas, giant underground reservoirs have been constructed to help control flooding, and initiatives have welled up to capture and reuse rainwater.

On this edition of BEGIN Japanology, our theme is rain. We examine how rain has shaped Japan's climate, lifestyle, and culture.

The Rokko mountain range lies just north of the city of Kobe. Running east-west following the coast, it rises right above the residential areas. Its highest peak is Rokko Saikoho (931 m.), commonly known as Mt. Rokko. Since ancient times, the local people have followed trails up into the highlands. Now these routes offer plenty of challenges and fun for visitors too.

There are many trails to choose from. Some are best left for experienced hikers; others are suitable for first-timers. On this edition of Journeys in Japan, George Bourdaniotis sets off to explore a couple of the trails that offer fantastic views.

He is guided along a route that includes a challenging section known as the "Suma Alps". This trail offers great panoramic views of the sea and hills, and eventually ends up right on the sea shore.

Next George takes an easier trail that goes straight to the top. He also visits some of these teahouses on the trails. The oldest was built more than 80 years ago. Others are equipped with facilities for playing table tennis or quoits. These teahouses are monuments to the long-established tradition of climbing in the Rokko mountain range.

Mount Rokko
The summit of Mt. Rokko can be reached by ropeway or cable car. At the top there are various attractions for all ages, including several spots offering panoramic views and a farm where visitors can see farm animals close-up.

The Suma Alps, a secluded spot in the urban area
The Suma Alps Trail takes hikers closest to the sea. The highlight is crossing a narrow ridge of granite rocks popularly known as the Suma Alps, where craggy cliffs drop down steeply on both sides. Traversing the Suma Alps is like hiking through actual mountainous terrain. It's hard to believe it's so close to the center of the city.

Daily mountain climbing in Kobe's backyard
Mt. Takatori (328 m.) has a relatively gentle slope and offers magnificent views from the top. Local people like to climb this peak early every morning. At the top they join in "radio exercises" which help them to keep fit and supple. After that, many go to relax with their friends in their favorite teahouses. There's always a welcoming atmosphere.

From Tokyo, it takes about 3 hours by slinkiness bullet train to Shin-Kobe. To get to the cable car terminal, it takes about half an hour, by local train and by bus. The cable car runs every 10 to 30 minutes, and reaches the summit in 10 minutes.

Itadakimasu - Weekend Chirashi Sushi Party

Chirashi sushi

Chirashizushi ちらし寿司, "scattered sushi") is a bowl of sushi rice topped with a variety of sashimi and garnishes (also refers to barazushi). Edomae chirashizushi (Edo-style scattered sushi) is an uncooked ingredient that is arranged artfully on top of the sushi rice in a bowl. Gomokuzushi (Kansai-style sushi) are cooked or uncooked ingredients mixed in the body of rice in a bowl. There is no set formula for the ingredients and they are either chef's choice or sometimes specified by the customer. It is commonly eaten because it is filling, fast and easy to make. Chirashizushi often varies regionally. It is eaten annually on Hinamatsuri in March.

Itadakimasu - Bento

Bento (弁当 bentō?)[1] is a single-portion takeout or home-packed meal common in Japanese cuisine. A traditional bento consists of rice, fish or meat, and one or more pickled or cooked vegetables, usually in a box-shaped container. Containers range from disposable mass produced to hand crafted lacquerware. Although bento are readily available in many places throughout Japan, including convenience stores, bento shops (弁当屋 bentō-ya?), train stations, and department stores, it is still common for Japanese homemakers to spend time and energy for their spouse, child, or themselves producing a carefully prepared lunch box.

Your Japanese Kitchen - 2010/08/02 - Daikon pancakes


Daikon Pancakes(encore)

Ingredients (Serves 4)
*400g daikon
*20g dried shrimps
*1/4 cup / 50ml water
*2 bacon slices
*70g joshinko rice flour
*70g shiratamako glutinous rice
*sesame oil
*coriander leaves

*1 tbsp sake
*dried shrimps soaked in water
*1 cup / 200 ml water
*1 tsp granulated Chinese chicken stock
*sugar
*salt

1. Soak the dried shrimps in water for 15 minutes and chop them finely. Don't discard the soaking water.

2. Chop the bacon finely and daikon into 3 to 4cm strips, and boil it for about 5 minutes.

3. Cool it under running water, wrap the daikon in a cloth, and squeeze it hard.

4. Grind the shiratamako glutinous rice flour into a fine powder and add the joshinko rice flour.

5. To make dashi stock, combine the water, sake, the shrimp soaking water, granulated chicken stock, sugar, and salt, and mix together.

6. Put the daikon, dried shrimps, and bacon in a pan, and turn up the heat.

7. Add the dashi stock, shiratamako and joshinko, and mix while it cooks to keep it from getting sticky.

8. Lay a piece of parchment paper on a microwave-safe plate, and put the mixture on it. Spread the mixture evenly, cover it loosely with plastic wrap, and microwave it at 600w for about 6 minutes.

9. Remove the plastic wrap, let it cool, and cut it into bite-size pieces.

10. Heat the sesame oil in a frying-pan and fry the both sides of the cake until golden brown.

11. Serve with any condiments such as Chinese chili bean paste, soy sauce, and coriander.

Extreme Japan - Ichizuchisan

Mount Ishizuchi is the highest mountain on the island of Shikoku and also the highest mountain west of Mount Haku on the border of Ishikawa and Gifu prefectures. It is known as 'the roof of Shikoku' and the sharp, rocky summit resembles a huge stone hammer (?? ishizuchi?).

Mount Ishizuchi is an important object of worship in this region and one of the major centers of Shugendo, a sect of mixture of Shintoism and Buddhism. On the top of the mountain there is a small shrine called the Ishizuchi Shrine. This mountain is also known as one of Seven Holy Mountains (??? nana reizan?). There are several sets of heavy chains (? kusari?) leading up to the summit and this is the route many pilgrims opt to take, the longest set being 68m.

The climbing season opens every year on July 1, women being forbidden from climbing the mountain on this day.[1] Between mid-October and mid-November, people come from far and wide to view the autumn colours.

The area around Mount Ishizuchi is a major part of Ishizuchi Quasi-National Park.

The chicken was long regarded as sacred in Japan. Today, the bird has lost that mystique, but it remains an essential part of Japanese life.

The Japanese have produced remarkable breeds of ornamental chickens. Some are admired for their crowing, others for their appearance. One breed has tail feathers that can reach ten meters long!

For a long time, chicken was hardly eaten in Japan, but now it's one of the country's most popular foods. Japanese people also love to eat eggs, cooked or raw.

Distinguishing the sex of a newborn chick is a difficult task. When the Japanese developed a method of doing so, they amazed the world and transformed the poultry industry.

On this edition of BEGIN Japanology, we'll see what chickens and eggs reveal about Japan's artistic sensibilities and culinary culture.

- A father and son who love the ocean, and love their life by the beach.

Kujukurihama is a long, sandy beach that runs for over 66 kilometers along the Boso Peninsula, to the east of Tokyo. After the summer swimming season is over, the beach returns to its natural state, quiet and unspoiled. On this edition of journeys in japan, Gow meets some of the people who love living here, close to the ocean.

The local specialty: sardine cuisine
At Katakai fishing port, one of the main catches throughout the year is sardines. Because the fish are so fresh, they are often served as sashimi, a delicacy that you can usually find only close to fishing ports.

There are many seafood restaurants at Kujukurihama. Gow tries sardines prepared in various different ways, such as grilled mezashi (lightly-dried sardines), and pickled sardines with sesame.

She also discovers a special hand-made fish sauce known as "Anchovy Kusare", which makes a tasty souvenir.

A surfing paradise
The beach at Kujukurihama is one of the top surfing destinations in Japan. The waves roll in directly from the Pacific Ocean, which makes for great surfing year-round. Other water sports have been introduced recently, including kiteboarding and stand-up paddle surfing. There's lots to do on this beautiful unspoiled beach.

Kujukurihama's thoroughbreds
There is a riding school close to the beach. All the horses there are thoroughbreds that used to race. After retiring from racing, these horses spend the second phase of their working life carrying visiting riders.

The horses are exercised along the waterfront. The soft sand is ideal for the horses because it's not too stressful on their legs. The salt water is also good for keeping their hoofs healthy and healing inflammation in their joints.

Seeing the horses riding along the beach of Kujukurihama is a very special sight.

Your Japanese Kitchen - 2011/12/19 - Salmon and Potato Pancakes

Salmon and Potato Pancakes

Ingredients (Serves 4)
*4 - 5 potatoes (500g)
*1/2 onion (100g)
*1/2 canned salmon (70g)
*1/2 cup / 100ml milk
*4 tbsp potato starch
*salt & pepper
*vegetable oil

[for the an sauce]
*2 cups / 400ml dashi stock
*2 tbsp light soy sauce
*2 tbsp mirin sweet cooking sake
*1 tsp sugar
*salt
*1 tbsp potato starch and 1 tbsp water

1. Wash the potatoes well. Put the potatoes in cold water, then cover and boil them for 20 to 25 minutes until they are tender.

2. Cut the onion into 2cm square pieces.

3. Drain the salmon and break it into pieces.

4. When the potatoes are done, peel them. Put the potatoes in a bowl and mash them until smooth.

5. Add the onion, milk, potato starch and salmon while the potatoes are still hot, then mix. Finally, season with salt and pepper.

6. Divide the mixture into 8. Shape it into flat and round pieces.

7. Heat a little oil in a frying pan and fry them for about 3 minutes each on both sides until they are lightly browned. Repeat this with the remaining mixture.

8. Make the an sauce. Combine the dashi, light soy sauce, mirin, sugar and salt in a pan. Heat it and season with salt.

9. Thicken the sauce with the potato starch dissolved in the water.

10. Pile the pancakes in a large serving bowl and pour the piping hot sauce on top.

Japanese high technology is underpinning various new designs around the globe and fashion designers both at home and abroad are entrusting Japanese factories and studios to produce collection items. It is not uncommon for foreign designers to catch onto the quality even before we do in Japan. At the latest Milan Collection, popular designer Neil Barrett's sneakers attracted much attention for their curled up soles. The experienced craftsmen of Spingle Company, the shoemaker established by a Hiroshima-based rubber company, handle every step of the production process. The curl is achieved by baking the sole in a large old kiln - a time-consuming, traditional rubber processing technique now rarely used in the United States, where it was created, but here applied to shoemaking by the company's Chief Manager, Planning Department, Setsuko Kamakura just as the rubber company itself was on the verge of folding. We discover the innovation of this local manufacturer that astonished the world.

The latest women's style in Tokyo is the Oji-girl - a girl who dresses like a dapper dandy. It is all a combination of young feminine mode and tasteful traditional fashion. A mural of Mt. Fuji is a standard feature of public bathhouses in Japan. The number of such institutions, however, is diminishing. As a result, only two bathhouse painters are left. This episode shows painter Morio Nakajima coming up with colors and scenery that suit the steamy environment of the bathhouse, and finishing the expansive painting in just eight hours.

Top stage costume designer - Kumi Sakurai,

She loved the costumes of the Paris Opera and studied costume design there. She moved on to work in British opera and ballet, too, during three years learning the ropes in Europe. Sakurai then founded her own stage costume company in 1985 and brought a fresh breeze to the world of Japanese theatrical costume design. She introduces new techniques and materials in from abroad, decorates, patterns, sews and so on in highly distinctive ways and engages in a wide range of fields reaching all of the way to Ichikawa Ennosuke's Super Kabuki! We enter Sakurai's world and watch as she prepares for Universal Studios Japan's Christmas Parade.

The VOGUE international fashion magazine's FASHION'S NIGHT OUT in cities around the world is an event in which the boutiques of participating brands stay open outside hours for fashion fun through the night. Such big names as editor Anna Wintour, famed as the model for the film, the "The Devil Wears Prada", Michael Kors and other major designers came to Japan for the largest event ever to help with the disaster recovery and promote tourism to this country. Presenter Aki Shibuya takes part in events in the Aoyama and Omote-sando areas, interviews leading designers and also joins Wintour and other VOGUE editors of five nations the day before on an observation tour of Japanese fashion.

Your Japanese Kitchen - 2011/12/12 - Tsumire-jiru Soup

Tsumire-jiru Fish Ball Soup

Ingredients (Serves 4)
*6 sardines
*1 tbsp sake
*1 tbsp plain flour
*15cm piece burdock root
*4cm piece daikon radish
*1/2 carrot
*1 pack shimeji mushrooms
*6 cups/1200ml dashi stock
*1 tbsp sake
*1 tbsp mirin sweet cooking sake
*3 -4 tbsp miso
*salt

1. Shave the burdock root and carrot into sasagaki -pieces. Soak the burdock in water to remove some its bitterness.

2. Cut the daikon into 4 pieces first, and then, into rectangles. Cut off the hard root tip of the shimeji mushrooms, and break them into pieces. Cut the big pieces in half. Drain the burdock.

3. Fillet the sardines by hand, and chop them finely. Put the chopped fillets in a bowl, add the sake, plain flour, and salt, and mix well.

4. Heat the dashi stock in a pan, add the carrot, daikon, burdock, sake and mirin, and cook over medium heat for 10 minutes. When the vegetables are tender, add the shimeji mushrooms.

5. Cut it into bite-size pieces. When it comes to a boil again, add the bite-size sardine balls.

6. Serve in a bowl and garnish with condiments such as chopped leek, grated ginger, and shichimi.

Remote School on a Cliff

Gulu Village in Sichuan Province, is located in a mountainous region with 2,000-meter peaks. The Daduhe Valley, one of China's largest, separates the village from the nearest town. Local children have to walk for hours up a mountainous path to get to the local elementary school. After Chinese media reports highlighted this plight, donors helped children transfer to a school in town. But the donations used to pay for room and board have now run out. As a result, many students are faced with the decision of continuing their education. This episode of China Wow! follows a local teacher and school children in Gulu village.

*1 cup / 200ml mirin sweet cooking sake
*1 cup / 200ml sake
*2 cups / 400ml dashi stock

1. Cut the daikon into 4-5cm pieces, peel and quarter each piece. Boil the daikon in the water which is used for washing rice for about 15 minutes. Then drain it.

2. Clean the yellow tail with a paper towel and cut it into bite-sized pieces. Put it into a pot of boiling water, and blanch it until the water comes to a boil again. Then drain it.

3. Peel the ginger and slice it thinly.

4. Combine the sugar, soy sauce, mirin, sake and dashi in a pan, and bring it to a boil.

5. Carefully add the daikon and yellowtail into the pan, add the ginger, and bring the broth to a boil.

6. Turn the heat down to low, and place a drop-lid and simmer for 30 minutes.

7. Turn off the heat, and let it cool for about 30 minutes to let the flavor soak in.

Daikon Peel Pickled in Soy Sauce

Ingredients (Serves 4)
*1/2 daikon peel (200g)
*1/4 cup / 50ml vinegar
*2 tbsp soy sauce
*2 tbsp sugar
*1 yuzu juice
*1/2 yuzu zest
*8 pieces kombu (2cm-wide strip)
*1/2 tbsp Sichuan pepper

1. Cut the daikon peel into 2cm square pieces.

2. Make the pickle sauce: Combine the soy sauce, sugar and vinegar in a bowl. Add the kombu and the Sichuan pepper.

3. Put the daikon peel and the pickle sauce into a plastic bag. Add the yuzu juice and the yuzu zest.

4. Let the air out of the bag, and seal it tight. Put it in the refrigerator for at least 30 minutes.

Yuichi Yoshii's VERSUS TOKYO

Japan Fashion Week (JFW) is at the heart of the Tokyo Collection. Mercedes Benz has taken over sponsorship from the government, refashioning the buyer's event into extravaganza for all. The VERSUS TOKYO symbolizes this transformation.

The Tokyo Midtown event features ten leading Japanese brands-mostly men's-that reach out to the public through shows, installations and talk events. Yuichi Yoshii, one of Japan's most prominent buyers, is the man behind VERSUS TOKYO. A charismatic figure among fashion-conscious youth, he directs both popular brands and boutiques.

It's through his influence that insider labels, such as "mastermind JAPAN" and "PHENOMENON," took part in JFW this year.

Yoshii says, "I would rather convey the passion of fashion to the public rather than simply invite so-called fashion-industry people."

We cover the event that may redefine the future of JFW, including exclusive video of Yoshii's talks with participating designers to learn what these trendy, but often media-shy, designers have to say about Tokyo fashion today and the future of their industry.

From food to clothing to daily necessities, you can find anything you need at a Japanese shopping street, a long road lined with all kinds of stores. There are 13,000 of them across Japan.

Many shopping streets were destroyed during World War II, but afterwards they bounced back stronger than ever.

Recently, however, shopping streets have been in decline. This decline has prompted various efforts at revival, from radical renovations to massive matchmaking events.

On this edition of BEGIN Japanology, our theme is shopping streets. We'll explore their history, their role in Japanese life, and also the people working to ensure they have a future.
