Your Japanese Kitchen - 2012/01/30 - Goya Chanpuru

Goya Chanpuru (Goya Stir-fry)

Ingredients (Serves 4)
*1 block shima-dofu (Okinawan tofu)
*1 goya bitter gourd (300g)
*150g pork belly (for shabushabu)
*1 tbsp instant dashi powder
*1/2 tsp salt
*pepper

1. Cut the goya in half lengthwise.

2. Remove the seeds and slice it diagonally. If goya is not available, use cucumber or zucchini instead.

3. Cut the pork into bite-size pieces.

4. Heat the vegetable oil in a pan and fry the pork.

5. When the meat is cooked, add the goya and stir-fry together. Add the instant dashi powder and salt.

6. Break the drained tofu into large pieces and add it to the pan. If shima-dofu is not available, use cotton tofu or silken tofu.

7. Stir-fry quickly. Season with pepper.

Fudoki - Hikone Castle

Hikone Castle is the most famous historical site in Hikone, Shiga Prefecture, Japan. This Edo period castle traces its origin to 1603 when Ii Naokatsu, son of the former daimyo Ii Naomasa, ordered its construction. The keep was originally built in 1575, as part of Otsu Castle, and was moved to Hikone by the Ii clan. Other parts of the castle were moved from Nagahama Castle. Hikone Castle was completed in 1622. Naokatsu's lands had been taken from him in the interval by the Tokugawa shogunate, and when his brother Naotake assumed control of the area around Omi Province, he was able to complete the castle by collecting stones from the former Sawayama Castle.

When the Meiji era began in 1868, many castles were scheduled to be dismantled, and only a request from the emperor himself, touring the area, kept Hikone Castle intact. Today it remains one of the oldest original-construction castles in Japan. The main keep of Hikone Castle was designated a National Treasure by the Ministry of Education, Science, Sports and Culture in 1952. Hikone Castle also has several parts which are designated Important National Cultural Assets: Umaya (Stable), Tenbin Yagura (Balance Scale Turret), Taikomon Yagura (Drum Gate Turret) and Nishinomaru Sanju Yagura (West Fort Wing Three-story Turret).

Fudoki - Chion-in

Chion-in in Higashiyama-ku, Kyoto, Japan is the headquarters of the Jodo-shu (Pure Land Sect) founded by Honen (1133–1212), who proclaimed that sentient beings are reborn in Amida Buddha's Western Paradise (Pure Land) by reciting the nembutsu, Amida Buddha's name.

The vast compounds of Chion-in include the site where Honen settled to disseminate his teachings and the site where he died.

Smart City Anticipates Going Global

Trust in nuclear power has been shaken as a result of the problems in Japan, and renewable energy is looking all the more attractive to many people. Smart houses that use only "green" energy fit within that framework.

Building houses, for the most part, has been the business of construction companies. But automakers are leveraging their eco-technology to get involved. At last month's Tokyo Motor Show, Nissan and Toyota displayed their approaches to residences, alongside long-time homebuilder Sekisui.

The city of Toyota, in Aichi Prefecture, has started a pilot project to assess the feasibility of the smart city concept Private and public entities are taking part. About 20 families already live in the model community. The homes get power from large batteries that store energy generated from the sun. Electricity can be shared among the households and facilities such as hospitals and schools.

If the concept works well in actual practice, the building of smart cities may not only be good energy policy, it also may prove to be a smart approach to business in a global market for energy efficiency.

As Japanese society ages, "community cafes" are becoming a vital way for older citizens to find good company.

Japanese game producer Yoshifumi Hashimoto joined video-game maker SNK PLAYMORE CORPORATION in 1993 and directed the development of action games before moving across to MarvelousAQL in 2005, where he produced the farming simulation game Bokujo Monogatari, Rune Factory series and Oboro Muramasa among others. Hashimoto became operating officer of MarvelousAQL in November 2011. We meet this industry key player and learn all about the new shape of the company.

In this journeys in japan, Gow takes a trip to Mikuni-cho of Sakai City, Fukui Prefecture, in search of snow crabs, the king of winter delicacies.
Mikuni is famous for its delicious fresh crabs, being close to good fishing grounds. When the snow crab fishing season starts on November 6, many people travel great distances to Mikuni specifically for the crabs.
Gow first has a taste of boiled crab at one of the restaurants on the busy shopping street, and is amazed at how delicious it is, like something she's never tasted before.
Then, at an old ryokan inn, acclaimed for serving top-class crab dishes, she is treated with crab sashimi and grilled crab.
She also wanders through the old Mikuni townscape and gets to meet the local people to enjoy a delightful, heart-warming time.

Yamani Fisheries is located in Tojinbo, famous for its magnificent view of rugged cliffs that continue on for a kilometer. Serve a selection of seafood in addition to snow crab.

Your Japanese Kitchen - 2012/01/23 - Salmon Battera Pressed Sushi

Salmon Battera Pressed Sushi

Ingredients (Serves 4)
*1 block salmon fillet for sashimi (150g)
*2 tsp salt
*1/2 cup / 100ml vinegar
*1/2 tbsp sugar
*1/4 tsp light soy sauce
*1 cup / 200ml rice
*3 tbsp vinegar
*1 tbsp sugar
*1/2 tsp (or less) salt
*1 tbsp yuzu juice
*10 shiso leaves
*1 cucumber
*1 tbsp roasted sesame seeds

1. Sprinkle salt on both sides of the salmon. Put it on a tray, and let it stand for 30 minutes in the refrigerator.

2. Rinse the salmon under running water to remove the salt and carefully pat it dry.

3. Combine the vinegar, sugar, and light soy sauce in a bow to make the marinade. Place the salmon in the marinade, cover it with plastic wrap, and refrigerate it for about 40 minutes.

4. Cut the cucumber in half lengthwise, and remove the seeds and chop it coarsely.

5. Roughly chop the shiso leaves.

6. Cook slightly firmer rice and prepare the sushi vinegar by mixing together the vinegar, sugar, salt and yuzu juice.

7. Add the sushi vinegar to the firmly cooked rice and fold the rice in a slicing motion.

8. Once the rice has cooled, add the cucumber, sesame seeds, and shiso leaves.

9. Cut the marinated salmon horizontally into quarters. Lay plastic wrap in a glass mold and fill the mold with sushi rice and level it.

10. Put the two slices of salmon over the rice and cover it with plastic wrap, and press it using the bottom of a bowl.

11. When it's firm, remove the sushi from the mold and cut it into bite-sized pieces without removing the plastic. After the pieces have been cut, remove the plastic wrap, and serve.

Winter Joy - Kusatsu

Kusatsu is one of the most popular hot springs resorts in Japan and regularly achieves high rankings in Japan-wide surveys.

There are about 100 onsen in Kusatsu with a total amount of about 34,000 liters water per minute pouring out of the ground. The water is sulfurous and acid. The hot springs are said to help cure the following ailments: arthralgia, stiff shoulders, paralysis, hardenings, bruises, sprains, chronic indigestion, hemorrhoids, chills, arteriosclerosis, burns, chronic gynecological disorders.

The water from the onsen is used not only for bathing but also for heating of the city's primary and secondary schools, the municipal welfare center, the streets during winter and many households, as well as for the municipal swimming pool.

Cool Hokkaido - Healing in Noboribetsu and Toya

Noboribetsu is a city in Iburi subprefecture, Hokkaido, Japan. Part of Shikotsu-Toya National Park, it is southwest of Sapporo, west of Tomakomai and northeast of Hakodate. The name, Noboribetsu, derives from an Ainu word, nupur-pet, which means dark-coloured river (the kanji ?? are used for their phonetic value only, and have no relation to the original meaning).

Lake Toya is a volcanic caldera lake in Shikotsu-Toya National Park, Abuta District, Hokkaido, Japan. The stratovolcano of Mount Usu lies on the southern rim of the caldera. The lake is nearly circular, being 10 kilometers in diameter from east-west and 9 kilometers from North-South. The lake's biggest town, Toyako Onsen is located on its western shore. The town Toyako is located on the other side of the lake.

Batteries... We use them so often that we hardly even think about it. Mobile phones, cameras, portable audio players - even your car keys might have a battery inside.

Japan makes 4.8 billion batteries every year, and the Japanese have a long history of battery breakthroughs, from recent advances in rechargeable batteries to what may have been the world's first dry-cell battery over 120 years ago.

Recently, electric car batteries have been used not just for driving, but as power sources for entire homes.

After the Great East Japan Earthquake in March 2011, supplies of water and electricity were cut off in many parts of northeastern Japan. Batteries played a key role in helping evacuees.

The era of the samurai in Japan ended in 1868 with the Meiji Restoration, marking the start of the country's modernization. One of the powerful forces in this movement was the Satsuma domain - the area now known as Kagoshima.
The warriors of Satsuma were renowned for their fierceness as fighters. That samurai spirit still lives on in modern-day Kagoshima.

Kagoshima lies at the southern tip of Kyushu. It has a mild climate year-round, with warmer average temperatures than most other parts of Japan. It's a volcanic area, with many active volcanoes and abundant hot springs. The city of Kagoshima has been nicknamed the "Naples of the East" because both cities have bayside locations and have active volcanoes close-by. In fact, Kagoshima City and Naples actually have a sister-city tie-up.

Nagashima Museum
Sakurajima, Kagoshima's iconic mountain, is best viewed from the Nagashima Museum.

Sengan-en
At the Sengan-en garden, you can glimpse the way the wealthy Shimazu clan used to live.

The Chiran samurai residences are open from nine to five, year-round.

Sir Paul Smith conducted his first fashion show in Japan last October. We get to see Japan through the eyes of this acclaimed fashion designer, through a talk with his friend Claudio Colucci, an architect who is resident in Japan, and an exclusive interview with MC Shibuya.

Sir Paul was in Japan in April 2011 not long after the disaster of 11 March in order to give his staff a hug! The October show conveyed an upbeat message. Each of the models wore a different colour of the rainbow, while Paul Smith sported a shirt emblazoned with the words, "I LOVE JAPAN".

Your Japanese Kitchen - 2012/01/16 - Eggplant and Beef in Miso, Natto Miso Soup

Eggplant and Beef Simmered in Miso

Ingredients (Serves 4)
*6-9 eggplants (700g)
*200g thinly sliced beef
*1 cup /200g dashi stock
*4 tbsp sugar
*3 tbsp miso
*3 tbsp soy sauce
*3 tbsp mirin sweet cooking sake
*2 tsp tobanjan(Chinese chili bean paste)

1. Cut off the calyxes and peel the eggplants lengthwise in a striped pattern.

2. Cut them into 3cm-thick round pieces.

3. Soak them in water for 4 to 5 minutes to remove the bitterness. Drain them, and pat them completely dry.

4. Combine the dashi stock, miso, sugar, soy sauce, mirin, and tobanjan in a bowl.

5. Heat the oil, and deep-fry the eggplants lightly. Put a bit of oil in a frying-pan, and cook the beef briefly. Add the eggplants.

6. Add the seasoning mixture, and simmer for a while.

7. Put on a drop-lid on, and simmer some more. Serve and garnish with grated ginger.

Natto Miso Soup

Ingredients (Serves 4)
*1 pack natto(50g)
*1 small pack silken tofu (250g)
*80g nameko mushrooms
*4 cups /800ml dashi stock
*4 tbsp miso

1. Chop the natto.

2. Bring the dashi stock to a boil and add the nameko. Dissolve the miso into the stock.

3. Add the tofu, breaking it by hand.

4. Turn off the heat just before it comes to a boil, and add the chopped natto. Garnish with the chopped negi, and "Natto miso soup" is ready to serve.

Illegal dumping of household trash and industrial waste has become a serious issue in the Chinese capital of Beijing, resulting in environmental pollution. With Beijing's population of 20 million producing 16,000 tons of waste a day, the city's official landfills are expected to be completely full in five years. The government has begun waste-separation programs in some areas, but it has yet to take root. To raise awareness and combat this problem, a photographer and lawyer are taking action. This episode of China Wow! follows them as they attempt to bring more light to this important social issue.

Today's Japan Biz Cast will cover the Tokyo Motor Show 2011. The venue for the year's show was closer to Tokyo than in years past. Automakers from around world participated and there were plenty of attention-getting exhibitions that excited visitors, including new models being unveiled for the first time. From EV's, hybrids and plug-in hybrids to gas and diesel engines with impressive fuel efficiency, cars designed for eco-friendliness seemed to be the big trend. But there were also plenty of sporty models designed for a pleasurable driving experience. Join us as we take a look at what's new from both foreign and domestic carmakers.

"Ekiden"

Ekiden is a long-distance relay race. Instead of a baton, a sash is handed off. This sash is the secret to ekiden's widespread appeal in Japan; it is a symbol of perseverance and selfless duty.

Ekiden's inventor was Japan's first Olympian. He ran the marathon but passed out before reaching the finish line. This defeat drove him to create an event that could produce world-class Japanese runners.

There are various ekiden events, and the most grueling is the Mt. Fuji Ekiden. Teams of six run from the foot of Mt. Fuji to the summit and back down again - in four hours!

There are also high school ekiden championships. Forty years ago, one team was on the verge of being disbanded, until an inspiring coach took over and turned them into national champions.

On this edition of BEGIN Japanology, we look at ekiden - a unique Japanese athletic event that reveals what makes the Japanese tick.

Main Feature: The strongest dark fantasy "BERSERK"
"BERSERK" by Kentaro Miura is one of the most popular dark fantasy manga in Japan. We bring you the latest on the first cinema anime versions of this lengthy manga series, which will be released soon.

"BERSERK" began appearing in serial form in "Monthly magazine Young Animal" in 1989. Some 24 million copies of this series have been sold in Japan since then, in addition to 7 million copies overseas. "BESERK" is a masterpiece of contemporary fantasy manga, which has been translated for fans elsewhere in Asia, Europe, Russia and South America.

The sagas unfold in a majestic world reminiscent of medieval Europe. The protagonist Gats is a swordsman whose weapon resembles a huge chunk of iron. He and his followers embark on journeys to inflict vengeance.

Creating cinema versions of this fantastic world and the complex sagas which began more than twenty years ago was no easy task. STUDIO 4C Co. Ltd, one of Japan's most talented animation studios, responsible for masterpieces like "TEKKONKINKREET" and "Mind-Game", rose to the challenge. The history and art were carefully researched. An innovative combination of hand-drawings and computer graphics has been used to recreate dramatic combat scenes.

We interview Eiko Tanaka, the CEO & President of STUDIO 4C, as well as the director and animator, Toshiyuki Kubota, who is famous for characterizing "THE IDOLM@STER". And we also talk to Jay Noyes, who provided instruction and guidance on western swordsmanship for this anime version. Motion capture was used to recreate the awesome combat scenes in the original manga. The anime version of the "BESERK" series will shortly be released in Japan and elsewhere around the world. They are not to be missed!

Hayanon is not your average manga artist; she majored in physics at the University of the Ryukyus.

Hayanon draws on fascinating scientific topics and presents them in a readily accessible manner for children and the average reader. She is producing a number of series, including "Fantastic R & D" and "Rikeimangaka ni naruniha?"
