Kaiseki essentials. A traditional style of cuisine, kaiseki is generally enjoyed by small parties in a formal setting, and it's widely seen as a costly custom with elite appeal. But what do you eat and what's the etiquette? This time we present the ABCs of kaiseki in Tokyo.

Tokyo is a capital of gourmet dining. A city where you can feast on a kaleidoscope of different cuisines.

One is kaiseki, a traditional Japanese cuisine boasting a 400-year history. In modern terms, it is multi-course prix-fixe dining.

At a kaiseki meal, diners are attended by a female server in traditional Japanese dress.

Kaiseki cuisine is intended to accompany sake-drinking. Typically, you first choose a sake, and enjoy with your meal.

The second course is a soup, called "owanmono".

A kaiseki meal usually consists of seven to 10 courses.

This restaurant is located not far from Jiyugaoka Station. Instead of private dining rooms, it has an open layout with tables.
