Murakami's streets are lined with many traditional townhouses, called "machiya." The defining feature is the layout: a storefront along the street with private spaces beyond, with no solid walls. You can tour the old machiya and see how merchants lived in the old days.
Amy is holding a processed salmon product. More than 20 different salmon products are for sale in this machiya.

The restaurant serves many traditional salmon dishes. These are all salmon... salmon flesh, salmon skin, salmon eggs... every part of the fish is used. Nothing goes to waste.
