Hironobu Tsujiguchi: Confecting a taste of Japan

Hironobu Tsujiguchi was born in Ishikawa, the son of a traditional Japanese confectioner. After graduating high school, he left for Tokyo with dreams of making wonderful cakes. Unfortunately, soon after arriving in Tokyo, his family's business went bankrupt. Undaunted, Hironobu continued his studies, often working through the night. At the age of 30, he became the youngest person ever to win top prize at one of the world's most prestigious international pastry competitions.
Hironobu also studied in France, and during that time he was deeply affected by Jun'ichiro Tanizaki's essay In Praise of Shadows. Inspired by this work, Hironobu challenged himself to give his Western-style confectionery a uniquely Japanese quality. He began using soybeans, soybean flour and wasanbon, typical ingredients in traditional Japanese sweets. Robert Campbell speaks with Hironobu Tsujiguchi about what it means to be a Japanese pâtissier, and about his dreams for the future.
